Just for giggle does your battery box have a fusible mounted at the rear with a smaller cable? If so is it corroded? Also when it does rear its head does your voltage guage do anything weird?

Voltage gauge stays strong, not affected. Everything in the battery box is ok.
Only has one fuel tank gauge.

Check your firewall pass through plug(s) too! Sounds exactly like my other truck did when it got wet outside. Cleaned it up with contact cleaner and plugged and unplugged it a few times and hasn't done it after that.
